Another important part of the ‘low and slow’ BBQ style is injecting your proteins to keep them moist but also to add additional layers of flavour. The two main cuts that lend themselves to injection are Pork Shoulder (Pulled Pork) and Brisket. Injections are normally made up of ingredients that are readily available in your pantry at home; they don’t need anything too special. I will add some simple recipes for injections over time. Over the past 18 months, I have several injectors that I use for different occasions; these are the ones I have tried. Although I use all of these, the one I favour is similar to the Chops which I buy from Cabelas in the USA, click the image for the link.
Standard BBQ Injector

BDI Green Injector
This just needs the injection liquid in a container and the gun actually pumps the liquid straight into the meat. You can also adjust the amount each injection puts into the meat. Be careful with this as any particles can can cause problems to this injector
