Mango Jalapeño Planked Salmon

This is a recipe / how to video of smoking Mango Jalapeño Planked Salmon on the Yoder YS640. I was introduced to this 3 years ago by Andy Groneman who cooks for Smoke On Wheels BBQ Team in Kansas

Main Ingredients
1 White Onion – thinly sliced
2+ large Jalapeños – thinly sliced
3 tblsp minced Garlic – 5 large cloves
1/3 glass of white wine – to deglaze the pan
3 tblsp whole grain Mustard
1 medium jar of Mango Chutney
1 side of Salmon
Mad Hunky GP Rub
1 sprig of Rosemary – for garnish

Times and Temps
400f smoker
15 mins over direct heat
25 mins over indirect heat
140f internal temp – keep checking the Salmon and remove at 140f
