Schweinshaxe on the Carson Rodizio
This was first attempt at grilling Schweinshaxe on the Carson Rodizio. Schweinshaxe is a German dish of Pork Hock or Pig Knuckle. This Schweinshaxe was a Berkshire pig from Paddock to Table in Laverton. I also grilled a Sher Wagyu Picanha.
For a first attempt it came out really well. I’d probably take 30 mins off next time, as the skin with ultra crispy 🙂 It was difficult to cook on the skewers as the meat wanted to spin but I used some butchers string and it held in place. I’ll try the three prong skewers next time. I hope you enjoy the video
